hi charlotte!
robert schaller might be able to help. he teaches handmade emulsion
workshops in both colorado and florida, i believe. and, at the workshops,
they serve vegan fare. so, he's probably thoroughly considered gelatin-less
emulsion. i emailed him once about a color separation question, and he was
extremely kind and informative in his response.
