Have a lab do a "snip test." Just break off a few feet of unexposed film in
a changing bag, put it in a film box/bag, and take it to a lab. They can
run it through the processor, and assess the fog level. They should do this
for free. This seems to me a good way to start if you're not already set up
to do your own processing.
As to the color, I can't see why you couldn't process color film that called
for the old ecn process in current ecn chemistry. Just send a snip of this
to a lab and see what they find. I had some old 7247 dated 1976 that had
been frozen for decades, and a snip test showed that it had about 1/2 stop
of fog, and that the blue sensitivity was slightly impaired. I was able to
use it to good effect, which was great as I had thousands of feet. Once it
came out of the freezer, though, it went bad within a couple years.
