Not sure if you're looking for scary witches, campy witches, or children's
story witches. A little tonal context might help.

These are the most memorable witches off the top of my head:

Polanski did a version of "Macbeth" (1971)--which bridges two of the
previous suggestions.

There's a lively witch "love" scene in "Conan the Barbarian".

There's a really frightening witch in both "Evil Dead" and "Evil Dead
II"--the thing that keeps saying 'I'll swallow your soul!'. At least I
think that was a witch.

Sid and Marty Kroft's Witchiepoo (from HR Pufnstuff)...

Hansel & Gretel, Snow White, Sleeping Beauty, and other more obscure
Brothers Grimm adaptations. I've seen some old non-Disney-fied versions
that are pretty dark, scary, and fun.
